A blend of stems and leaf that is shaded 10 days prior to harvest. The shading imparts a depth of flavor and intensifies the green color of the leaf while the inclusion of stems adds a toasty, almost chewy finish

Sourced from Nagano – the city famed for its buckwheat noodles. Sugars in the buckwheat kernels caramelize as they are fired leading to a naturally sweet cup with a golden liquor and lasting, toasted finish.

All of our coffees are Single-origin and Single Cultivar products deliberately sourced and intensively researched for both ethical concerns and flavor. We go beyond the standards of so-called Fair Trade commodity coffee, cutting out the brokerage houses sourcing from individual farmers at the point of production.
Our roasts all follow the Japanese custom of tending significantly lighter than the larger coffee houses. A lighter roast allows for the flavor of the bean and the process by which it comes to your cup without scorching off the more subtle flavors.
We employ a Japanese-styled Pour-over Technique to ensure the highest possible product standards. Beans are ground to order, brewed to order, every single time. Please allow 5 – 10 minutes for service.
